Things We’ll Be Eating This Week
With a short work week, I haven’t planned our exact dinners by day, but here are a few things I expect to make this week:
- Fig and Prosciutto Flatbread with Massaged Kale Caesar Salad (such an oldie, but a goodie)
- Crockpot Chicken Tacos with Homemade Whole Wheat Tortillas
- Szechuan Noodles with Shrimp (since the husband would prefer not to eat chicken every night this week)
- Bacon and Brussels Sprout Salad with misc leftovers
Now that school’s back in session, it feels like I’m back to the daily grind. (Or at least I’m trying to be!)
Pork chops with caramelized onions, roasted broccoli with garlic, and sweet potato fries. Not pictured - a giant glass of white wine.
Dinner tonight (the ‘At the request of the husband’) edition:
Chicken stuffed with caramelized onions, ham, Brie cheese, and spinach - with broccoli and mac and cheese with spinach.
So good ! And so much spinach!
Dinner tonight - The ‘Entirely Microwaved’ edition:
Brown rice, frozen peas, and Trader Joes scallops with mushrooms in a cream sauce. Pretty good, very filling, and super fast!
Omg. Breakfast today was amazing. Leftover French toast from brunch this weekend, eaten al desko. I need to start eating breakast more often and not just grabbing a Clif bar. Meals like this give me hope to tackle my day!
Monday: beef & veggie pot pie with cheddar biscuits…I always halve this, because good lord.
Tuesday: Bobby’s Burger Palace for my birfday (BOBBAYYYYYYYY)
Wednesday: one-pot mac
Thursday: buffalo chicken tacos
Friday: no idea
I’m making this one-pot mac tonight (with bacon, of course) and I CANNOT WAIT.
Dinner tonight (the ‘Served With a Giant Glass of Wine’ edition):
Cous cous, green beans, and grilled steak. As much as I love eating out, it feels good to be cooking again!

In other news - I think I ate my weight in burrito today.
My post-run dinner:
A few meatballs, mac and cheese with broccoli, and a piece of a leftover sandwich with salami, provolone, roasted red peppers, and pesto. I was too tired (and lazy!) to put much thought into dinner, so this array of quick cooked food was great!
Oh my gosh, y’all. After reading tons of positive reviews for these fish tacos, I finally made them last night - with a few modifications. They totally lived up to the hype and the salted cabbage (which I was feeling pretty iffy about) was amazing! I used flour tortillas since that’s what we had in the house - and they still tasted delicous. I made a roasted corn salsa (with red onion and jalapeño) instead of the pico de gallo and I was too lazy to google ‘lime crema’ - so I mixed lime juice into plain yogurt, which was a tasty complement to the spicy salsa.
While making these, I couldn’t stop popping the little fried fish pieces into my mouth. However, next time, I’ll make just enough for the two of us, since I hated having to make it in batches. I’m too impatient and just wanted to eat!
A delicious summer dinner - crab stuffed portabello mushroom, corn on the cob, and pasta salad (with green and red peppers, cucumber, carrot, onion, celery, and heirloom tomatoes).
